Spring Supreme First Flush Organic High Mountain Baimudan
This 2021 Spring Supreme First Flushcomes from the same region as our Spring Organic High Mountain Baimudan. It is a unique harvest from a biodiverse mountaintop in Fuding.
This white dew first flush gives a light color of tea soup and incredible smooth and comfortable texture which we would describe as a spa to the throat. We tested it with a prolonged 3 mins steeping, not even a hint of astringency. The taste is mainly contributed by the buds as it makes up the majority. We usually expect first flush would be light in flavour, but this year it really overturned our logic as it offers a very balanced floral and sweetness from the buds with mild mineral undertone. The sweet clover-like flavor with a very refined honey or cream texture marks the signature of High Mountain Baimudan. This is thanks to the dry year in the past 6 months which allows the trees to accumulate minerals from the soil and create this wonderful first flush baimudan which we have never tried.
This refined and elegant brew is a beautiful expression of both the land and the precise, demanding craftsmanship of the humble Fuding tea farmers.
